6 cups Arugula Lettuce (or your favorite lettuce blend)
1+1/2 cups Raspberries, fresh organic
1/2 cup Tomatoes, organic, baby yellow , cut in half
1/2 cup Sunflower Seeds, toasted
3/4 cup Feta Cheese, organic herb type, crumbled
Toss together the lettuce, tomatoes, and sunflower seeds. Plate, and then sprinkle the raspberries and feta cheese.
Raspberry Lime Dressing
1/3 cup Olive Oil, organic, light, extra virgin)
1/4 cup Spring Water
2 Tbsp. Rice Vinegar (organic)
1 cup Raspberries, fresh organic
1 tsp. Thyme, fresh organic, chopped fine
Juice of 1/2 Lime
Pepper to taste, freshly ground
Place all of the ingredients in a food processor. Adjust to taste. You may want to add more liquid, or raspberries. Put it in a jar and shake. Chill it for at least an hour. Drizzle the salad with the dressing, reserving some on the side for those who do not like a lot. Enjoy!
