1+1/2 Lbs. Baby Artichoke Hearts, fresh organic
3 Cloves Garlic, fresh organic, minced
2 Tbsp. each of fresh organic: Italian Parsley, Thyme, & Chives
2 Tbsp. Coconut Oil, organic
Sea Salt & Cracked Black Pepper
You may use frozen Artichoke Hearts if the fresh are not avaiable. Fresh ones have a wonderful texture and rich flavor, so if available that would be suggested. To prepare the fresh Artichoke Hearts, wash and remove the first layer or two of leaves. Then remove the outer skin of the stems with a peeler, and cut a little of the stem off. Depending on the size, cut them in half or quarters. The baby hearts do not need to have the choke area removed. In a skillet place the Coconut Oil and cut Artichoke Hearts. Saute for about 10 minutes, stirring occasionally. Add the minced Garlic and saute for another 10 minutes, or until tender. Remove from the skillet and add the herbs. Toss and season. Enjoy!
