2 cups Black Beans, organic, cooked (or two cans)
1/2 cup Red Onions, diced
2 Mangoes, chopped
1 Red Bell Pepper, small chop
2 Garlic Cloves
1/2 cup Cilantro, chopped (and 2-3 Tbsp. for garnish)
Salt & Pepper to taste
Place the cooked/cooled or canned beans in a bowl and add all of the other ingredients (pouring off most or all of the liquid). Adjust all of the cut ingredients to your liking. The onions, cilantro, and mangoes can be added as close to serving as possible to help keep their bright color. The lemon or lime can be added earlier to the beans. All ingredients can be cut up and ready to go...tossing it all together right before serving. Put it in a bowl on the center of a large plate, topped with extra cilantro, and surrounded by your favorite chips, or the pita recipe here. You may also include it within a wrap, or as a veggie burger topping. Yum!
