1+1/2 cups Pearl Barley, organic, cooked
2 Persian Cucumbers, organic, siced and quartered
1 cup Carrot, organic, large grate
1 Tomato, large organic, cubed
1 Orange, organic, segmented and sliced (with zest)
3 Tbsp. Parsley, fresh organic, chopped
Sea Salt & Cracked Black Pepper
Cook the Barley ahead of time per instructions. It usually takes between 25-30 minutes. Allow time for the Barley to chill. Prepare all of the vegetables; Cucumbers, Carrot, and Tomato, and place in a bowl. Zest the Orange first, add it to the bowl, and then remove the skin and pith. Slice the segments in bite size pieces and blend it all together. Chop the Parsley, and blend it all together with the chilled Barley. Season to taste with the Sea Salt and Cracked Black Pepper.
