1 package of Pita Bread (healthiest, gluten-free if possible)
2-3 Tbsp. Dried Herbs (Oregano, Basil, Thyme combo. or your favorite)
1/2 tsp. Onion Powder (not onion salt)
1/3 cup Olive Oil, organic
1/4 cup Parmesan Cheese (or "Rice Slice" Parmesan sprinkle for vegan)
Salt & Pepper to taste
Prepare large cookie sheet(s) with parchment paper. Brush olive oil on pita bread, both sides. Sprinkle your favorite dried herbs, salt & pepper. You can cut them into wedges before, or after you put the herbs. Using scissors makes it easy to do. Bake in a pre-heated oven at 350° for 15-20 minutes until golden (keep an eye on them as they can easily burn, and every oven varies slightly). Once they come out of the oven, sprinkle with Parmesan, and extra herbs if you wish.
Tips: If you want the chips to be flakier, drizzle a little more olive oil on top prior to baking. Also, use less salt if you are planning on using the cheese, and depending on the amount of salt within your dip. It is also helpful to put all the herbs (including dried garlic and onion if you like) together into a bowl, equaling approximately 2-3 tablespoons. These can be mixed together and sprinkled on top at one time.
