2 cups Basil, fresh organic, packed tightly
1/4 cup Pine Nuts, toasted
2 Garlic Cloves
2/3 cup Olive Oil, extra-virgin, divided
Sea salt and freshly ground Black Pepper, to taste
1/2 cup Parmesan (or Pecorino Romano) Cheese, freshly grated
Combine the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped. Add 1/2 cup of the oil and process until fully incorporated and smooth. Pulse in the cheese at the very end. Season with salt and pepper. Drizzle over your food, or use as a dip for sweet potato chips. This sauce is also wonderful when mixed with your favorite pasta.
